snowman meringues

recipe is same as other meringue cookies.  just pipe out two flat circles overlapping a little.

decorate with whatever you are comfortable giving your child with.  blueberries, freeze-dried blueberries, chocolate chips, etc.  i have used tips of sugar-free jelly bellies.  you can also use coconut cutout cookies or almond cutout cookies to make the eyes, nose & buttons by adding food coloring.

makes 3 snowman

Ingredinets

1 (35g) egg white

pinch (0.1g) cream of tartar

pinch (0.1g) salt

1t (4g) Truvia

1/4t (2g) fresh lemon juice (if you don’t have it, you can leave it out or add alcohol-free vanilla flavor)

extra: any candies, dried fruits to decorate

Directions

Whip egg whites with a mixer for about 30 seconds.  Add cream of tartar and salt and whip until soft peaks form.  Add Truvia and lemon juice(or vanilla flavor) and whip until stiff peaks form.

Spoon in the mixture into a ziploc bag and cup out one corner.

On a parchment lined baking sheet, pipe out two cycles to make ghost shapes.

bake at 200F for 1.5hrs.  let them cool completely.
