miso marinated salmon

this is one of those recipes, that doesn’t have enough fat, so will need to serve with a side or a dessert that will work with your ratio.

1T miso

1t sesame oil

1/2t rice vinegar

1/8t ginger, freshly grounded

1/2t green onion. thinly sliced

few drops of Stevia or any sweetener  of your choice

** try to buy pacific salmon (e.g. alaskan king or sockeye) since they  have less mercury

Mix all the ingredients (except the salmon) in a wide bowl.  put salmon to marinate.  let it sit in the refrigerator for about two hours.

roughly wipe off the marinade and place the salmon on a baking sheet lined with parchment paper.  Bake at 375 for 12 minutes (depending on the thickness of the salmon piece)
