pressed cookies (using coconut flour)

I have modified the coconut cutout cookie recipe to use a cookie press that i have.  It turned out great, but for some reason, it works better on some shapes than others.  but it was fun making the cookies and clara sure was happy to see  them…

Ingredients

1/4C (28g) coconut flour
1/4t (0.3g) baking soda
1/16t (0.3g) sea salt
2T (28g) butter
2T (28g) coconut oil, softened or melted
2T (27g) Truvia
1 (50g) egg
1/4t (2g) vanilla extract
Optional : Truvia or Splenda colored with food coloring, or cinnamon powder mixed with little bit of Trvia

Directions

Mix coconut flour, baking soda, and salt.  set aside.
Using a mixer, mix butter, coconut oil, Truvia, egg, and vanilla extract.  Mix in the flour mixture.  Blend well.
Using a rubber spatula, put the dough into the cookie press.  press out cookies onto parchment lined cookie sheets.  you can sprinkle the colored Truvia at this time.
Bake at 325F for 8-10 minutes.
